Which measurement interval should I use for measurements with the PhoxyCube?

The measurement interval depends on the duration of your cultivation and the speed of expected processes: For measurements lasting more than 24 h, typically an interval of  5 - 20  min is sufficient. This avoids collecting too much unnecessary data and at the same time decreases sensor bleaching (see Drift in the Technical Data of the PhoxyCube).
